Chicken afritada is a popular Filipino stew cooked in tomato sauce with chicken pieces, carrots, potatoes and bell peppers. It might be an everyday recipe, but with a little love you can transform these ordinary ingredients into something extraordinary.

500g chicken breasts
1 large potato, chunks
300g carrot, chunks
1 1/2 bell pepper (red, yellow and green), chunks
1/2 onion, chunks
1 cup chicken stock
400g tomatoes
1 tbsp of tomato paste
1 tbsp of fish sauce
3 bay leaves, dried basil
oil, salt and pepper

Heat vegetable oil in a pan
Add potato for five minutes and set aside
Add the chicken, salt and pepper and cook for five minutes
Add onion, fish sauce, dried basil, tomatoes and tomato paste
Add chicken stock and simmer for 10 minutes
Add carrots, red, yellow and green bell pepper and bay leaves
Simmer for 10 minutes
Add potato and simmer for 5 minutes
Season with salt and pepper to taste
Serve with steamed white rice
